Our weather here in Woodinville has been surprisingly sunny, and relatively warm for December (It’s been in the low 50s! To us Seattle locals, that’s sort of balmy). I’ve been hosting a few impromptu backyard bonfire social-distancing get-togethers for wine loving friends. I usually don’t have much time to plan ahead, so I was glad to find these prepackaged Cello Cheese flights to serve to my guests with their Woodinville wine.
Cello’s first Cheese Flight includes a Smoked Pepper Gouda cheese; a 6-month Manchego cheese; and a Harissa Rubbed Fontal cheese. They recommend pairing it with Chianti (around here in Washington we call that Sangiovese) or Sauvignon Blanc. We’ve had an excellent Sauvignon Blanc recently from Cave B Estate Winery and we really enjoy the Farm Girl Sauvignon Blanc from Smasne Cellars. There’s an excellent Sangiovese at Martedi Winery, and we love the Sangiovese from Michael Florentino Cellars as well.
The second Cello Cheese Flight I picked up provides a Monteau Alpine-style cheese, Wine-Soaked Goat Cheese, and Bergamot & Hibiscus Rubbed Fontal cheese. They recommend pairing with Champagne (around here in Washington we call that Sparkling Wine), Tempranillo, or Pinot Noir. You can find Pinot Noir in Woodinville at Celaeno Winery, Lachini Vineyards, Panther Creek Cellars, Zerba Cellars, Maryhill Winery, Torii Mor Winery, and at W.T. Vintners (among others).
