It was an Easter Sunday to remember, but for very unusual circumstances. This year we all were restricted to resident family gatherings, and experienced reduced access to grocery shopping. This made things slightly more of a challenge! I found myself very unprepared and out of sorts. I failed to add a ham and other fresh ingredients that I wanted for Easter dinner to my Amazon Fresh order (that took me a week to get a scheduled delivery!). That left me cook our “feast” using only what I had on hand, in our pantry and freezer.
I ended up pulling together what was a very enjoyable meal. We had sockeye salmon from Costco (previously frozen), ham (thanks to my Dad for a porch delivery!) twice baked potatoes and scalloped potatoes. The one item that I really missed was fresh salad, as I had completely run out of croutons, lettuce and only had one tomato left in the fridge. We got by with canned green beans, stewed with bacon, onions, hot sauce and seasoning.
All in all, it was a success that was definitely helped by our selection of Woodinville sparkling wine. I think our attitude these days is much more “go with the flow” regarding dinner and food prep and to be honest, it’s working for us. Granted… 4 pm daily happy hours aren’t hurting anyone either!
I had been saving this Patterson Cellars Sparkling Rosé for our Easter dinner, and was very excited to pop it open. This one is made from Pinot Noir grapes and sourced from the Yakima Valley AVA and an unnamed vineyard west of the Cascade Mountains.
I had just grabbed this chilled bottle of sparkling rose from the fridge and set out two tulip shaped glasses, instead of champagne flutes. I realized this month that we have broken almost every wine glass in the house and it is time to restock! I’m doing a bit of research of which types of wine glass to pair with my Woodinville wines.
This was our potato loaded dinner, and nobody was complaining. The rose paired perfectly with the sockeye salmon I had cooked. We all missed having a fresh caesar salad, but not enough to make a grocery run.
My daughter baked these delicious chocolate chip cookie bars and I plated the last remaining macaroons that I had purchased from Trader Joe’s. The citrus macaroon highlighted similar notes in the Rosé and this too was a great pairing. I love Rosé with many types of food, but I think that pairing it with salmon is by favorite!
